Raw chicory tips

Raw chicory chicory chicory is a great Apulian classic. The farmers of Salento and Puglia have been masters in preparing them since time immemorial. After having cultivated and cared for the chicory plant with patience and love, they remove the chicory one by one, wash them and then put them in "tanning": a very delicate bittersweet mix that flavors the product while keeping its crunchiness unchanged. Try it alone, in salads, rice or pasta salads.
