Barley maccheroni pasta


In Puglia, barley maccheroni are still handmade, one by one, following ancient traditions. In the Bari area, they are usually larger, while in the rest of the region, they are found in smaller versions. This unique pasta pairs perfectly with rustic dishes like lamb sauce, offering a bold and authentic flavor, or with a dressing made from porcini mushrooms and extra virgin olive oil. It’s also excellent with lighter sauces like almond pesto and fresh cherry tomatoes.
