Wild fennel flowers


They are called caroselle because the Apulian word 'carosa' means maiden. They are the small inflorescences of wild fennel, tender, Mediterranean-scented, potted here according to tradition. This is an ancient product that still makes its appearance on Apulian tables today. You can add them to your mixed salads, to the filling of a focaccia or a potato gateau, or use them to give just the right amount of liveliness to a dish of puttanesca Pugliese style, with pitted Leccino olives and some capperino. What can I say? Definitely worth trying.
